Japanese miso, soup recipe
In this paragraph I will give you thebasic recipe of Japanese miso soup, that is of themiso soup with tofu. There are, in fact, many variations of miso soup. This we will see now, is thatclassical. What is needed? Here are the ingredients for 4 people:
- 3 cups of water (720 ml)
- 1 tablespoon of granulated dashi *
- 4 tablespoons of organic red miso *
- 150 g of soft tofu, cut into cubes
- 1 finely sliced green onion (or a spring onion / leek ...)
- 1 tablespoon of wakame seaweed *
While soft tofu is easily found in the supermarket, you may struggle with ingredients such as wakame seaweed (kombu seaweed is more common which, in fact, you could also use but has a very strong flavor, in this soup recipe. miso, wakame seaweed is better suited because it matches the delicate flavor of tofu better)

How to make Japanese miso soup?
Prune the water and boiling temperature and, as soon as the first bubbles appear, add the granular dashi.
Aside, while you wait for the water to boil, sauté the vegetables (onion and possibly okra) in a pan.
Stir and add the three tablespoons of red miso paste. With a whisk, mix until the miso paste is well blended with the dashi broth.
Turn the burner down to low. The broth, from this point, must keep warm but must not boil.
Add the wakame seaweed and tofu, cook for another two minutes and turn off. Add the vegetables, mix and serve still hot.
