In the kitchen, thekohlrabiit can be eaten raw, steamed, boiled or, as in the case of the recipe that we will see, baked in the oven. When eaten raw, kohlrabi can be the sole ingredient in salads or combined with other vegetables and tubers such as boiled potatoes. It can also enrich salads with cereals and mixed vegetables. Stuffed kohlrabi, vegetarian recipe

Among the manyrecipes with kohlrabi, I chose thatfilledas it can be used as a main course. It is less usual than salads but, in this version, it lends itself perfectly even if you have vegetarian diners. Here are the ingredients for 4 people:

  • 4 kohlrabi
  • 400 g of fresh spinach
  • 100 g of ricotta or, if you prefer, low-fat quark cheese
  • 25 g of Parmesan
  • 1 yolk
  • 1 small clove of garlic
  • salt, just enough
  • fresh ground pepper, just enough
  • 1/2 lemon
  • Extra virgin olive oil, to grease the pan

This recipe is extremely dietary. Each serving provides only 118 kcal, a light recipe with an excellent ratiocalories / taste! Here's how it is prepared.

  • Drain the quark cheese or ricotta well.
  • Clean the kohlrabi, arrange it on a greased baking sheet or lined with baking paper. Cook the kohlrabi for 30 minutes at 100 ° C (preheated oven).
  • Meanwhile, clean the spinach and wash it. Stew them in a pan with a few cups of water. Those who prefer a less light recipe can sauté them with garlic and oil.
  • Remove the kohlrabi from the oven, cut the top (1/3) of each cabbage and empty it with a spoon. The upper part will act as a “lid” for your filling.
  • Squeeze the spinach and chop coarsely, mix it with the cheeses, parmesan and egg. Add the finely chopped garlic and season with lemon juice, salt and pepper.
  • Fill each kohlrabi with the spinach mixture and cover with the "lid".
  • Finish cooking in the oven for another 10 minutes at 120 ° C.

A simple and light recipe!

Kohlrabi, properties

Thekohlrabiit is rich in vitamin C but is not famous for it. Kohlrabi is popular for itsanti-cancer properties. The anti-cancer properties of kohlrabi seem to be linked to the contribution of glycosinolates contained in these vegetables.

To report the anticancer properties of kohlrabi was a study published inJournal Acta Horticulturae who analyzed the properties and contents of glucosinolates in 11 strains of Brassica oleracea, including cultivations of the variety ofkohlrabi. Kohlrabi has been shown to contain 4 times more glucosinolates than classic white cabbage.

Kohlrabi is low in calories, as can be understood from the light recipes that can be prepared with this ingredient. 100 grams of product provide only 27 calories. Vitamin C also helps the body producecarnitine, a substance that encourages our body to transform adipose (fat) deposits into energy.
